A new and exciting fine dining experience opens on the Jersey Shore this Friday, September 14 at the newly renovated Ama Ristorante at The Driftwood Cabana Club, Sea Bright. The elegantly Dt5FW6a9x appointed showplace, with spectacular views of the Atlantic Ocean and Shrewsbury River will offer the best in Italian cuisine and newly created Tuscan classics as well as a hand picked wine list personally selected by Chef/Owner, Pat Trama. Trama is well known on the Jersey Shore for his former popular Ama Ristorante Tuscana in Atlantic Highlands."We are passionate about our food and wines and proud of the beautiful new setting in which we will present them in," said Trama, who, along with Laura Borawski, Ama's general manager, were the team behind the popular Ama Ristorante Tuscana. Ama, which is Latin for love and the name of a small town in Tuscany, is the result of collaboration between Chef Trama, who is celebrated for his creative interpretations of classic Italian dishes, and the Stavola family, who bring their dedication to excellence and proud family traditions to the new venture. In fact, the restaurant's new logo is a rooster, which is known throughout Italy as a symbol of good fortune and has been a symbol used by the Stavola family for several generations. For the newly relocated restaurant, which has expanded seating capacity, a full bar and an intimate private dining room, Trama plans to recreate some of his favorite dishes from the Atlantic Highlands menu, but also has spent months assembling, testing and perfecting new creations, thanks to a larger, state of the art kitchen. Some new menu items are Fettuccini Bolognese with Black Truffle Butter and Shaved Reggiano; Maine Sea Scallops with Chanterelles Baby Zucchini and local Corn, and a 16 ounce Milk fed Veal Chop with White Fig Marmalade and Dolce Gorgonzola. Chef Trama is also pleased to present his new, carefully hand selected boutique wine list for Ama. To develop the list Chef Trama relied on his depth of wine knowledge gained from personal visits to Italian vineyards and his lifetime career as a chef to many star studded restaurants including the Michelin star rated River Caf, the Myriad Restaurant Group, which includes the New York Times three star rated Corton, Tribeca Grill and Nobu, and David Burke Fromagerie. "We tried over 500 wines for Ama's wine list," explained Chef Trama. "This is an exciting addition to our dining experience. For me, a wine list is like adding another tantalizing ingredient to our menu and we chose wines specifically to complement Ama's menu. We have many reasonably priced selections as well as a very special reserve selection," he added. One of his favorite vineyards is the Castello Di Ama winery in Chianti, in the Tuscan region of Italy where he visited several times. Some of the wines on the wine list from that vineyard include Chardonnay "Al Poggio" Castello Di Ama , 2011 Toscana and Chianti Classico Ca stello di Ama, 2007 Toscana.
